Cabbage parcel

500g ground beef 6 pcs carrots, chopped 1 sayote, chopped 2 big potatoed, chopped Celery, chopped 6 cloves garlic, chopped 2 onions, chopped Salt, pepper, and soy sauce Oatmeal 2 big Cabbage heads Toothpick Dip: Soy sauce Calamansi Mix all chopped vegetables. Add salt, pepper and soy sauce to taste. Add oatmeal in small amount at a time, just enough to bind the mixture. Scoop the mixture and place in the cabbage leaf, fold and secure with toothpick. Repeat last procedure until the mixture is used up. Ready the steamer with boiling water. Place the cabbage parcel and steam for 2p minutes. Serve hot with the dipping sauce.

Two-kinds-of-of-potatoes POTATO SALAD

1kl boiled potatoes, quartered 1/2kl boiled sweet potatoes, cubed 2 heads chopped red onions 1 cup mayonnaise Ground black pepper Salt to taste Dried herbs or fresh chives Mix all ingredients in a big bowl. Serve chilled.

Meatballs: Ground beef Garlic Salt and pepper Soysauce Oatmeal Combine in a bowl. Mix and form into balls. Deepfry, drain oil and set aside. Sauce: Olive oil Minced garlic Chopped onions Cubed tomatoes Cubed bellpeppers Ground beef Tomato sauce Cheese Water Saute first 5 ingredients in a wok. Squash, grated (Use steel cheese grater) 2 heads Onion, chopped 6 cloves garlic, chopped Toasted garlic (optional) Salt and pepper Dried Italian herbs and/or turmeric Oatmeal Flour Canola oil for frying In a deep bowl, put first six ingredients. Add oatmeal until manageable to form into patties. Just add flour a little at a time to adjust. Fry each patty and drain excess oil in a paper towel. Canned tuna (include water) minced garlic minced onion salt and pepper flour baking powder egg Italian seasoning (dry herbs) Canola oil for deep frying. How to: Put canned tuna in a bowl. Add garlic, onion and salt and pepper. Add flour enough to form balls, baking powder and scrambled egg Add Italian seasoning. Form the mixture into small balls. Deep fry in canola oil. Serve skewered with sweet and sour ketchup on the side.

Stirfried beef and big bellpeppers

Canola oil crushed and minced garlic minced onions 200 grams ground beef salt and pepper  Worcestershire sauce soy sauce 500 grams big bellpeppers (about 125gms each piece) sliced lengthwise little water chopped celery or onion leaves  Saute onion and garlic in oil. Add beef and simmer for at least three minutes. Add salt, pepper Worcestershire sauce and sauce according to taste. Place the bellpeppers and little water if needed. Let cook a bit. Top with celery before removing from fire.

Beef marinated in Honey-Mustard with stir-fried veggies on the side

Two kilos beef, sliced as in tapa 2 pouches of Clara Ole's honey-mustard olive oil Garlic onion for saute onion for garnish Marinate the beef in the prepared honey-mustard marinade. Refrigerate overnight. Saute garlic and chopped onion in olive oil.  Quick-fry each piece of beef by batch and let the beef rest on the side of the pan while frying the next batch. Repeat until all beef slices are fried. Cover and let cook for 15 minutes.  Turn each piece of the beef and let cook covered for 15 minutes. Add the rest of the marinade and let cook for another 20 to 30 minutes. Adjust flavor with salt and pepper. Serve garnished with onions. *** Stirfry cubed singkamas, potatoes, sayote and carrots.  Season with salt and pepper.  Sprinkle with dry italian herbs. ***

My Gut-feel Kimchi

8 heads of Chinese cabbage, halved and washed rock salt brown sugar chili powder or whatever preserved chili available ginger, chopped garlic, chopped bottled vinegared onion (optional) bottled vinegared cucumber (optional) Dry the washed halved cabbage head.  Mix the rest of the ingredients in a bowl starting from chili powder. Rub layer after layers of leaves with salt and brown sugar and then mixture until done. Arrange in a plastic container and let stand for 24 hours in a dry cool place. The next day, transfer in glass container and discard remaining water. Let stand again for another day or two.  The Kimchi is done when the cabbage and the spices are already fermented. Refrigerate to lengthen shelf life. Enjoy as appetizer. (When I made my first kimchi out of native pechay, I first rubbed the salt and let the pechay spurt its water within  24 hours before adding spices. Vege-Spaghetti in chili-parsley tomato sauce

 For this one, i used the store-bought spaghetti fortified with malunggay a.k.a moringa and carrots and made partly with durum semolina flour (El Real). I always use the other brand (ideal) which is made with durum wheat alone. I must say that the former has silky texture while the latter is al dente and rotund. I can choose both because they are not merely made with wheat flour, the ordinary flour used for our common white bread. This means, we can access now more nutritious and fiber rich pastas... i believe, this attempt from El Real is a success. I will patronize it from now on. This is what a grocery girl can do, compare products and eliminate the more evil in the basket. The chiliness of this pasta wards off the chilliness of the windy weekend. Arroz Con Caldo

UY 2 T olive oil 12 garlic cloves, chopped 1 big onion, chopped 1 thumb (or more) ginger, chopped 1/2 kilo chicken, cubed 1/2 kilo malagkit rice water 2 chicken cube soy sauce turmeric powder (kalawag) salt and pepper Toasted garlic for garnish. In a skillet, saute onion and garlic in oil. Add ginger. Add chicken cube and stir fry for a while and add the washed malagkit rice. Stir again for about 3 minutes. Add water. Let boil until rice pops open. Add chicken cubes, soy sauce, turmeric powder, salt and pepper. Let the flavor sink in and the soup is ready to be served hot. Garnish with toasted garlic.

Spaghetti for lunch

No, not all saucy spaghettis are created equal. For this one I am having, I can fairly call it half-half. Half-italian for using fair amount of chopped white onions and garlic as well as olive oil and pre-prepared fresh tomato sauce, and half-FIlipino for my use of store-bought sweet blend Filipino style tomato sauce and a can of spaghetti sauce with meat and mushroom flavor. On top of this sauce, I used my favorite canned solid tuna in water, dried basil, a few grates of quickmelt cheese in lieu of salt and a lot of pepper. I am a follower of spaghetti. And you can find recipes here. Depending on what's in the fridge or in the pantry, not all of my spaghetti meals are created equal, indeed. Enjoy!

Fried Bangus with Mango-okra salsa

By GERLIE M. UY I had this entree for lunch today. So filling, especially with my Java rice with toasted garlic on top. Fried Bangus 6 pcs small Bangus 1/4 cup soy sauce 1/4 cup vinegar cloves of garlic, crushed 3 T fish sauce Canola oil for frying Clean Bangus but leave it unscaled and slice it with butterfly cut. Marinade fishes with the next four ingredients, adding a little amount of oil. Let stay for at least 30 minutes before frying. Fry in a a hot oil. Mango Okra Salsa 2 Semi-ripe mangoes, seeded and cubed 8 pcs Okra, boiled and cubed 1 medium white onion 3 tomatoes, seeded and cubed salt and pepper Mix all ingredients and chill before serving.

Pinoy's Salad: Gulaman or Seaweed

By GERLIE M. UY 1/2 kilo seaweed hot boiling water 6 medium tomatoes 3 red/white onions grated green mango boiled egg/salted egg (optional) vinegar salt pepper In a steel bowl, place the seaweed. Add boiling water until the color turns from greenish to brownish. Drain. Add the remaining ingredients and toss well. Chill until time to serve as appetizer or side dish.

Pinoy's Salad: Salted Eggs

UY Pinoy's Special salad: Salted eggs with onions and tomatoes 6 salted eggs (red-painted ones in the Philippine Market) 6 medium-ripe tomatoes 2 red or white onions 2 pieces dalanghita (or 6 pcs calamansi or any citrus) 1 T soy sauce (optional as the eggs are salty already) coarse pepper Peel and slice the salted eggs. Arrange in the platter. Slice the tomatoes and onions, round or chopped for easy bite. Add in the platter. Squeeze the citrus and make sure that the seeds are not going to the preparation. Add soy sauce and coarse pepper.. Serve as side dish or on top of hot boiled rice.

Achara nga Kapayas (Pickled Papaya)

UY MMM appetizing papaya achara Pickled Papaya, ever yellow because of the turmeric powder! 1 whole large green papaya, shredded (see shredder below) 2 medium carrots, shredded 1 800ml can pineapple tidbits, reserve juice 1 L coconut vinegar (may use cane vinegar) 4-6 cups brown sugar 6 medium red and green bellpepper, sliced lengthwise thinly 6 medium red onion, sliced lengthwise 6 thumb big ginger, sliced lengthwise thinly Turmeric powder Mix together and Set aside the shredded papaya and carrots in a large plastic container that can withstand heat. Do not use steel as the acid will react on it. In a wok, put the vinegar, reserved pineapple juice, four cups sugar, bellpepper, onion and ginger and turmeric powder. Bring to boil and let it boil constantly for 10 minutes. Add pineapple tidbits. Taste and adjust sourness vis-a-vis sweetness with remaining sugar. Shiitake Chicken 'n Chili

UY Chicken pieces, red chili, bell peppers, white onions and halved shiitake mushrooms I had a great time for this recipe as I bought the powdered chili, dried chili and whole shiitake in Beijing, China. Here are the ingredients for the chicken bits and vegetable and chili mix as well as the gravy. Start off the preparation by soaking in hot water 12 pieces of shiitake mushroom until soft. and prepare the chicken below: **Chicken Bites 1kl Chicken breast, cut into bite-size pinches of salt and pepper a pinch of powdered red chili 2 T fish sauce 2 T soy sauce 2 T premium soy sauce 2 T corn starch a small amount of water 1 cup Canola Oil, deepfrying Mix all ingredients and let stand for at least 30 minutes. Fish Soup with kulitis

UY Sinabawan nga Isda nga may kulitis! 800ml water 2 piece tomatoes 1 onion, sliced 6 fried fishes 2 spoons fish sauce pinch of salt and pepper A bunch of kulitis In a stock pot, put tomatoes and onion. Bring to boil and let boil until tomatoes and onion are done. Add fried fishes, fish sauce and salt and pepper. Bring to boil and adjust taste. Add the kulitis and cover. Remove from fire. Pan-grilled Sesame Chicken (Teriyaki)

UY A serving of Sesame Chicken Teriyaki...  500 gms chicken breast, sliced medium thick and in serving size 2 T sesame oil 1/2 cup white wine 1/4 cup soy sauce 1/4 cup premium soy sauce (Lee Kum Kee) 1 T sugar 2 T brown and white Sesame seeds, toasted 1-2 T canola oil for basting In a non-metallic bowl, place the chicken and the next five ingredients. Mix well and pierce the chicken with fork. Chill for 15 to 30 minutes. In a pan, toast lightly the sesame seeds. Set aside. Lightly coat the same pan with canola oil. Pan-grill the chicken breasts, basting each with all if needed.  Let cook for 3 minutes on medium to high heat. repeat until all chicken is done. Place each piece in a serving platter and spread toasted sesame on top of each chicken. Meanwhile, in the same pan, pour the marinade and let boil until the liquid is reduced into half. Crispy Red Radish and Cucumber in Yakult dressing

UY Cucumber and Red Radish Crisps! 6 red radishes, sliced thinly 1 medium cucumber, sliced thinly 1 small white onion, sliced thinly 1 small head of lettuce Dressings 3/4 to 1 Yakult (60 to 80ml) 3 Calamansi, juiced 1 T olive oil salt and ground pepper In a non-metal bowl, mix all first three ingredients. Chill. For the dressing: in a glass with lid cover, put all last four ingredients and cover. Shake. Drizzle dressing in the first bowl of vegetable. In a serving platter, lay the lettuce bed. Just before serving, add all of the vegetables. Serve lightly chilled and serve immediately. Another look at the salad... cucumber... yakult quick photo of the salad... the salad on the side!!!
