Pizza Dough Breads

I am posting this today because my nephews love this bread. It is crusty and almost like toasted ciabatta with all the herbs it had. I made pizza dough breads out of the doughs I made last week. I had posted my easy pizza crust recipe in the past as I learned the difficulty of reconstructing the recipe when I wrote in random papers my recipe in the past. But this time, instead of 2 2/3 cups All purpose flour, I used 2 cups APF and 2/3 oatmeal and added Italian oregano leaves. You may use dried herbs and slivered nuts to make the dough extra special.   Dough  Shredded or sliced cheeses  dried herbs or slivered almonds  How to:  Preheat oven at 190C for 10 minutes. Beef Rigatoni in Tomato Sauce

  My cheesy and creamy rigatoni beef pasta    I love pasta and tomato-based sauces with lots of herbs. Lucky I am because I was able to harvest lots of parsley these days and for an extended period of time (they grow more new leaves). Weekends are usually reserved for no-rice menu so this is our staple. I don't heat oil anymore so I saute now using water     Ingredients: Rigatoni pasta, cooked as package direction Reserve pasta water Garlic Onions Tomatoes Chili pepper  Ground Beef Button Mushroom Chunky Tomato Sauce Red Cheese or Quickmelt cheese Parmesan Cheese Parsley Salt and pepper   How to:      In a casserole, add spoons of pasta water then add garlic and onions till brown.      Add tomatoes and chili pepper plus mushrooms and ground beef. Add more spoons of pasta water if needed. Let simmer again.      Add tomato sauce and red cheese as well as parmesan. Reserve Parmesan for garnish. Let boi...

Two-kinds-of-of-potatoes POTATO SALAD

1kl boiled potatoes, quartered 1/2kl boiled sweet potatoes, cubed 2 heads chopped red onions 1 cup mayonnaise Ground black pepper Salt to taste Dried herbs or fresh chives Mix all ingredients in a big bowl. Serve chilled. 

Homemade Pesto (Basil and Pine Nuts)

My friend in Paris sent me Pine nuts when she saw me posted pesto using almond s as the base nut of the pesto. Since the original pesto uses Pine Nuts, she wanted me to create the real thing. So when I had the chance to get fresh sweet basil leaves, I immediately used it. Pine nuts is quite expensive if found in our grocery stores, so I also recommend the almonds in lieu of this rare one. Almonds in the pesto is dry while pine nuts is much more nutty and blends well. At any rate, the aromatic sweet basil is the base of it all and I loved both ways! 4 cups sweet basil 3-4 cloves garlic 1/2 cup Pine Nuts Salt and pepper to taste 1/2 cup olive oil and 1/4 cup reserve 1/2 cup grated Parmessan In a food processor, place the first four ingredients. Blend well while slowly adding the half cup Olive oil. Transfer in a glass bottle and Add Parmessan Cheese. Put the remaining 1/4 cup of Olive oil on top of the mixture. Fried Eggplant with cheese and ketchup combo

UY 1 kilo eggplants, cut lengthwise into two  and cut crosswise into 6-inch long Italian dry herbs (oregano, basil etc) 1 T ground pepper 2 T rock salt 1/2 t chicken powder (optional) 1/2 cup canola oil for deep frying  Toppings 1/3 of small block of shredded quickmelt cheese ketchup  In a bowl, mix the first five ingredients. Let stand for five minutes for flavors to sit in.   Heat oil and fry the eggplants, at least 1 minute on each side or until well done. While frying another batch of eggplants, spread cheese and ketchup over fried eggplants arranged in the platter. Cheese. Cheese and ketchup.   Place atop the first batch of fried eggplant the second batch and spread cheese and ketchup again. repeat procedure until all eggplants are fried.  Make sure to put cheese and ketchup on top of it all for presentation.  Serve hot in pair with boiled rice... related post. eggplant salad.
