Air-fried Chili Garlic steeped in Canola oil

    Aside from the S inamakan , what else can we make out of our chili? It was my simple dream then to have a calamansi and chili by my garden so that i will just pick them when I need them. well, I got way more than I asked for because I luckily grew a lot of chili plants. Well, I tried making Chili Garlic in oil and use them in my recipe whenever it calls for some spice.   Chili Garlic, chopped canola oil   Harvest the chili, remove leaves and stems and let dry under the sun. Air fry the chili and garlic for 4 hours under the lowest temperature.  Put air-fried chili and garlic inside a clean glass jar. Add oil, enough to cover it.  Store in an area with room temperature and away from the direct sunlight.

Beef and Mushroom Biryani Rice

250gms ground beef Greek yogurt Canola oil 2 cups rice 2 cups water Turmeric 2 packs Asian Gourmet  spice Salt Mushroom Carrots, chopped Chopped oregano Toasted cashew nuts Marinate beef in yogurt for 10 minutes Saute beef in a little oil. Set aside. In a wok, rinse rice. Add water, turmeric and prepared spice. Bring to boil covered. Add mushroom and carrots. Cook in low heat. Add hot water to adjust rice absorption to allow it to cook. Garnish with cashew nuts and chopped oregano. Serve hot. Posted via Blogaway

Tuna balls skewers

Canned tuna (include water) minced garlic minced onion salt and pepper flour baking powder egg Italian seasoning (dry herbs) Canola oil for deep frying. How to: Put canned tuna in a bowl. Add garlic, onion and salt and pepper. Add flour enough to form balls, baking powder and scrambled egg Add Italian seasoning. Form the mixture into small balls. Deep fry in canola oil. Serve skewered with sweet and sour ketchup on the side.

Stirfried beef and big bellpeppers

Canola oil crushed and minced garlic minced onions 200 grams ground beef salt and pepper  Worcestershire sauce soy sauce 500 grams big bellpeppers (about 125gms each piece) sliced lengthwise little water chopped celery or onion leaves  Saute onion and garlic in oil. Add beef and simmer for at least three minutes. Add salt, pepper Worcestershire sauce and sauce according to taste. Place the bellpeppers and little water if needed. Let cook a bit. Top with celery before removing from fire.

Stir fried Beef and Broccoli

1 tablespoon Canola Oil 1 tablespoon of crushed Garlic 1 large Onion, cubed 1 kilo beef tenderloin cut in strips 1 kilo Broccoli 1 can button mushrooms bellpeppers 4 tablespoons of olives 2-3 table spoons cornstarch saved water from canned mushroom salt and pepper to taste Cut meat in strips. Cut the broccoli flowers from the stem and separate into desired sizes. Remove hard outer portions of the stem until the soft center reveals. Cut into bite size. Dissolve 2-3 tablespoons of cornstarch in a bowl of water. In a wok, saute garlic and onion in oil, put the beef tenderloin and cover for three minutes. Remove impurities from the beef liquid, put a little salt and pepper and let cook for another two minutes. Put small amount of water or liquid from the canned mushroom, then place the broccoli, mushroom and bell peppers. Let cook for two to three minutes. Camote Fries

Camote or sweet potatoes now abound in the wetmarket at 20php per kilo only. This means it is time for camote fries.... 1 kl camote or sweet potato, cut lengthwise Water Salt A little flour Canola oil Peel camote and cut lengthwise, about three times as thick as the french fries. Soak in water with salt for 15 minutes and drain well. Heat oil for deep frying. If preferred, roll each slice in flour (optional) and fry each batch for about a minute. One knows that its done when the camote slice floats in oil. Drain oil for each batch in a paper towel. Serve with tomato ketchup.

Fried Bangus with Mango-okra salsa

By GERLIE M. UY I had this entree for lunch today. So filling, especially with my Java rice with toasted garlic on top. Fried Bangus 6 pcs small Bangus 1/4 cup soy sauce 1/4 cup vinegar cloves of garlic, crushed 3 T fish sauce Canola oil for frying Clean Bangus but leave it unscaled and slice it with butterfly cut. Marinade fishes with the next four ingredients, adding a little amount of oil. Let stay for at least 30 minutes before frying. Fry in a a hot oil. Mango Okra Salsa 2 Semi-ripe mangoes, seeded and cubed 8 pcs Okra, boiled and cubed 1 medium white onion 3 tomatoes, seeded and cubed salt and pepper Mix all ingredients and chill before serving.

Grilled Bellpepper and Corned Tuna Macaroni

UY THE DELIGHTFUL NOT-BAKED MACARONI... with grilled bellpeppers, cheese, chunky tomato and corned tuna. 500g long macaroni 2T canola oil 6 cloves garlic, chopped 1 medium white onion, chopped 500ml Chunky Tomato with Three Cheeses (Clara Ole brand) 1 cup sweet blend ketchup small amount of water salt and pepper 1 can corned tuna 1 cup cheese sliced olives grilled bell peppers, sliced thinly *Cook macaroni according to package directions. Drain and set aside. Grill the Bellpeppers in a frying pan. Slice thinly. Set aside. *In a wok, saute garlic until slightly brown, then add onions and stirfry until translucent. Add the tomato sauce, ketchup and a small amount of water as well as the salt and pepper according to taste. Let boil. *Add the boiled macaroni and mix well. Cook for a minute or two then add the corned tuna, half of the cheese, and sliced olives. Pan-grilled Sesame Chicken (Teriyaki)

UY A serving of Sesame Chicken Teriyaki...  500 gms chicken breast, sliced medium thick and in serving size 2 T sesame oil 1/2 cup white wine 1/4 cup soy sauce 1/4 cup premium soy sauce (Lee Kum Kee) 1 T sugar 2 T brown and white Sesame seeds, toasted 1-2 T canola oil for basting In a non-metallic bowl, place the chicken and the next five ingredients. Mix well and pierce the chicken with fork. Chill for 15 to 30 minutes. In a pan, toast lightly the sesame seeds. Set aside. Lightly coat the same pan with canola oil. Pan-grill the chicken breasts, basting each with all if needed.  Let cook for 3 minutes on medium to high heat. repeat until all chicken is done. Place each piece in a serving platter and spread toasted sesame on top of each chicken. Meanwhile, in the same pan, pour the marinade and let boil until the liquid is reduced into half. More of the okra tempura... young okra sliced in half!!! 2 cups flour with turmeric powder and ground pepper my fave duo... beaten eggs  the batter the batter with the bread crumbs the batter and the okra... not-so-deep fry... my idea of deep-fry up close and personal with the batter mixture About 20 pieces young okra, sliced in to vertically into two 2 cups flour 1 T turmeric powder A dash of ground pepper A dash of fine iodized salt 1 cup bread crumbs 2 eggs, beaten 1/2 to 1 cup water 1 cup canola oil Sweet Chili ketchup, Plain ketchup or homemade thousand islands dressing In a bowl, add flour, turmeric powder, pepper and salt.  Add bread crumbs and eggs. Add water and mix thoroughly.  Add okra slices. In a small sauce pot, add the oil. It was green when not yet ripe and the peelings turned purple when they ripened. Mango-Sesame Muffin

Mango-Sesame Muffin Muffins, up close and personal mmm, yummy muffins. 3 cups all-purpose flour yummy muffins 11/2 cup sugar   1 1/2 t baking soda 1 1/2 t baking powder  3 t cinnamon powder   3/4 t iodized salt   4 eggs, lightly beaten   1 cup canola oil   1 t calamansi juice   3 cups shredded ripe mangoes   3/4 cup raisins   1/4 cup sesame seeds In a large tin or glass bowl, combine the first five ingredients. In another bowl, combine the eggs, oil and calamansi juice. Slowly add the latter to the dry ingredients (the former mixture) just until moistened. Then stir in the mango, raisins and sesame seeds.   Fill greased muffin tins with the mixture up to two-thirds full. Bake at 350 degrees F for 20 minutes or until a toothpick comes out clean. Cool before removing from muffin tins.

Fried Eggplant with cheese and ketchup combo

UY 1 kilo eggplants, cut lengthwise into two  and cut crosswise into 6-inch long Italian dry herbs (oregano, basil etc) 1 T ground pepper 2 T rock salt 1/2 t chicken powder (optional) 1/2 cup canola oil for deep frying  Toppings 1/3 of small block of shredded quickmelt cheese ketchup  In a bowl, mix the first five ingredients. Let stand for five minutes for flavors to sit in.   Heat oil and fry the eggplants, at least 1 minute on each side or until well done. While frying another batch of eggplants, spread cheese and ketchup over fried eggplants arranged in the platter. Cheese. Cheese and ketchup.   Place atop the first batch of fried eggplant the second batch and spread cheese and ketchup again. repeat procedure until all eggplants are fried.  Make sure to put cheese and ketchup on top of it all for presentation.  Serve hot in pair with boiled rice... related post. eggplant salad.
