                  One of the reasons I kept a blog on the food I make is because I tend to misplace my notes. After years of cooking and being interested in cooking, I just can't rely on recipes posted on other blogs especially when it involves baking. There are factors to consider in baking, the timing and the oven one uses contribute to the differences in the outcome. Common Sense and constant practice makes perfect. This recipe is a tweak from my Calzone Dough which you may try. What I like about my recipe is that it is just so perfect everytime. I don't double my recipe but make one dough at a time. Meatballs: Ground beef Garlic Salt and pepper Soysauce Oatmeal Combine in a bowl. Mix and form into balls. Deepfry, drain oil and set aside. Sauce: Olive oil Minced garlic Chopped onions Cubed tomatoes Cubed bellpeppers Ground beef Tomato sauce Cheese Water Saute first 5 ingredients in a wok. Squash Ukoy with Tostitos Spinach Dip

Squash, grated (Use steel cheese grater) 2 heads Onion, chopped 6 cloves garlic, chopped Toasted garlic (optional) Salt and pepper Dried Italian herbs and/or turmeric Oatmeal Flour Canola oil for frying In a deep bowl, put first six ingredients. Add oatmeal until manageable to form into patties. Just add flour a little at a time to adjust. Fry each patty and drain excess oil in a paper towel. Carrot Oatmeal Cookies (No egg, No butter, No milk Recipe)

2 cups sifted flour 2 cups oatmeal 2 cups grated carrots 4 tsp baking powder 2 tsp cinnamon powder 1 1/2 to 2 cups sugar 1 cup olive oil (or use canola oil) 1/2 cup water In a bowl, put the first five ingredients in a bowl. Add olive oil and mix well. Then add water and mix well. If needs more water to wet all ingredients, add a small amount at a time. Shape into ball and press flat between palms. Arrange in a flat baking tin and bake at 350F for 30 minutes. Makes 24-30 medium-sized cookies.

Banana Oatmeal Cupcake (No egg, No butter, No milk Recipe)

Wet ingredients About 8 overripe bananas (500 grams), mashed 1 cup brown sugar 1 1/3 cup olive oil (or canola oil) 2 tsp cinnamon powder (or vanilla extract) Dry Ingredients 2 cups sifted all-purpose flour 1 cup oatmeal 2 tsp baking powder Chopped macadamia nuts (any nuts or raisins will do) Combine all wet ingredients in a deep bowl Combine all dry ingredients in another bowl Add small amount at a time the dry mixture to the wet mixture. Mix well. Add the chopped nuts. Bake at 350F for 20-25 minutes. Makes 16 medium-sized cupcakes

Ultimate Banana-Oatmeal Muffin

By GERLIE M. UY It's so filling. I can't feel the oatmeal. These are what they say about my last banana-oatmeal muffin. I called this ultimate because I love the rise, i love the banana taste and the bready feel of flour and oatmeal. I have made banana cake and muffins  here  and  here  but this is much more memorable output as it is just perfect for me. I made a big batch as we have bunches of "balangon" (green variety) bananas... 2 cups canola oil 6 cups brown sugar  6 large eggs, beaten 10 cups flour, sifted 5 cups oatmeal quick cooking 3 T baking powder 2 cans (3 cups) evaporated milk 2 t vanilla  10 cups of mashed over ripe banana (balangon or the green variety) Pre-heat oven to 350F. Grease a medium muffin tins. In a mixing bowl, cream the first three ingredients until well-blended. Set aside. Combine the sifted flour and baking powder.  In the mixing bowl of creamed ingredients, alternately add mixed flour and milk, a little at a time. Blending...
