Homey Chicken Mami

Back when I and my four siblings were growing up, my father used to make us Chicken Mami. We love how we mix our own pancit, vegetables and chicken bits and add broth to the mixture. We used to queue as we gather our bowl of ingredients.  So, I made Chicken Mami to feed my visiting nephews. They enjoy the queuing and the idea that they get to mix their own bowl of soup. The Vegetables  1 kg Fresh Pancit or egg noodles, medium or small size 200 g Chinese Pechay, cut into strips 200 g cabbage, cut into strips 1 big carrots, julienned 100 g Baguio beans, cut slantly for quarter of an inch thick The Chicken 1 kg chicken breast Water Condiments Sauce: 1/3 cup Soy Sauce 1/3 cup Worcestershire Sauce 1/4 cup Patis or Fish Sauce Ground Pepper Toppings No-pork Chicharon, crushed into pieces Spring Onions, chopped Chili Toasted Garlic Preparation:  The Vegetables  1 kg Fresh Pancit or egg noodles, medium or small size 200 g Chinese Pechay, cut into strip...

Angel Hair Pasta with Vegetable and Tuna

Olive oil Garlic cloves 200g ripe tomatoes, chopped 200g bellpepper, chopped 100g celery Salt and pepper Cheese (optional) Reserved water from boiled pasta Tuna in oil Boil angel hair pasta for 2.5 minutes. Set aside. Reserve water. Saute vegetables in olive oil.  Add reserved water and the oil from tuna. Simmer till vegetables are tender to your liking. Adjust taste with salt and pepper. Add tuna and olive oil. Remove from fire and serve hot over angel hair pasta.

After a half-day walking tour of the Divisoria, we ended up in the mall there and despite the array of choices, this young man insisted that he will have Sushi and you can't fool him now that he can read and spot photos of something rolled miles away. *** Vegetables and beef strips in teriyaki sauce serves two in a hot plate! *** The vegetables and beef teriyaki on top of rice. ***

Nothing beats fresh ingredients!

I am posting the photo collage of my sister featuring her fish tinola with kangkong tops. I know that a kitchen rival is born! She has that kitchen sense actually when she just feel like exercising it. She boasts her 25pesos fish slices, bunch of fresh kangkong, fresh tomatoes, and her luscious and plump duhat for her dessert. Here is her enticing prep!

From Marijuana to Lotus Seeds: Fruits, Flowers and fresh greens we feasted our eyes on as we walk in Hanoi and Sa Pa, Vietnam

From Marijuana to Lotus Seeds and Tree where chopsticks are born, these are the photos of various fruits, flowers and yes, vegetables we feasted our eyes on as we walk along Hoan Kiem Lake in Hanoi and the market route in Sa Pa, Valley of Vietnam. If we were not walking, we must be riding the cyclo around Hanoi or ran a bit because of drizzles in SaPa.... What a memorable vacation because of these colors.    Can't help it. In Tam coc, when i saw a vietnamese woman  holding out her lotus to another vietnamese woman,  i excitedly extended my palm to ask for one.  I bought the preserved crunchy and nutty lotus seed... and because of that curious moment in tam Coc,  i can compare it with the raw peanutty texture of the fresh lotus seed.. Tastes good, actually.Yahoo!  We are all familiar with this fruit: its appearance and smell... Love Durian... Beside the watermelon, what's that??? Note: --My friend says that's a...
