Cassava Cake Pudding with sweet corn and olive oil

*** 2kg Cassava 4 tablespoon Olive Oil or butter 3 Eggs 1-2 cans condensed milk 1 can sweet corn (Canned Cream Corn or boiled then grated) sugar (add, if desired) Peel the cassava, remove the hard root and ground in a blender/grinding machine for a pudding finish.  If grated, the consistency is different as it will appear like a fudge finish. In a deep bowl, put the ground cassava and the ground sweet corn. Make a well, place the lightly beaten eggs, milk, and additional sugar.  Mix well together until smooth. In a pan, put the mixture and bake for 40 to 45 minutes at about 200F. Make 3 1-inch 9X12 pan of Cassava Cake Pudding. Serve hot or chilled.

Veges and Miso Soup

By GERLIE M. UY My first attempt to a Miso Soup is a success!  Our japanese soup server was initiated with this Veges and Miso Soup! Sans the flash, this is how it looks. Super Soupy soup... My soup today! It was a luck that Robinson's Bacolod has this stock of Korean Miso Paste! Here's another photo of the Korean Miso Paste I bought... 3 stalks celery, coarsely chopp 3 stalks Baguio leeks, coarsely chopped 1 medium potato, coarsely chopped 750 ml to 1L water rock salt ground pepper 2 T butter 100 gms Soy Bean Paste (Miso) In a soup pot, place water and add celery and leeks. Season with salt and pepper. In a high fire, bring to boil. Continuously boil for 5 minutes and remove from fire. Let cool a bit Separate the stock and the vegetables. Blender the vegetables. In a soup pot, place butter. Add the blended vegetables. Simmer for 2 minutes in medium fire. Add the stock. Dissolve the Miso paste with a little stock and add to the mixture. Bring to boil. Serve hot.

Steak A la Pobre

By GERLIE M. UY Steak is no "a la pobre" or "of the poor." Served here with corns on cob.  Grilling the corn... Serving the Steak ala pobre with corn on the cob... My T-bone steak of two kilos. I used four slices for pepper and garlic steak  while I used the three slices for the a la pobre steak. The measurement of the meat above is only an estimate!!!  My a la pobre and pepper and garlic steak in marinade, ready for the fridge!!! Adding a photo of the steak... 1 kilo T-bone Steak (3 pieces) Marinade: 2 T ground Pepper 2 T Garlic powder 2 T Onion powder 2 T Paprika 2 T rock salt 2 T brown sugar 4 T canola/olive oil 1/2 cup Lee Kum Kee premium soy sauce oil for brushing the grill 2 ears of sweet corn butter for brushing the corn Place the T-bone steak in a large baking tin. Banana Cake with Glazed Pili Nuts on top

More of the muffins; evidently more time to take photos!!! a closer look at the muffins... 1 cup butter 2 c brown sugar 3 large eggs, beaten 3 c flour, sifted 1 1/2 t baking powder 1/4 t iodized salt (omitted) 1 1/2 c evaporated milk 1/2 t vanilla (omitted) 6 cups of mashed over ripe banana a handful of glazed pili nuts Pre-heat oven to 350F. Grease a medium muffin tins. In a mixing bowl, cream the first three ingredients until well-blended. Set aside. Combine the sifted flour, baking powder and salt. In the mixing bowl of creamed ingredients, alternately add mixed flour and milk, a little at a time. Blending the mixture each time the ingredient is added in order to avoid lumps. Shredded Cassava Cake

UY 8 cups shredded cassava (some like it grated) 6 eggs, lightly beaten 2 cans condensed milk (about 300ml each) 1 small evaporated milk (1 cup or 250ml) 4 cups brown sugar 1/4 cup butter cheese for toppings (optional) Lightly wash shredded cassava with two cups warm water and drain liquid. Do not press. Pre-heat oven for 300F. In a deep bowl, mix all ingredients together except cheese. Reserve a portion of butter for greasing of pan. Strain and reserve a cup of liquid from the mixture. Grease two one-inch 7 X 11 pans. Pour half of the mixture in each pan. Bake for 30 minutes. Meanwhile, cook in medium heat the reserved cup of mixture and put the cheese. Set aside. HAPPY MORNING CUSTOMER.Pancake with Bugnay Syrup for breakfast!!! ANOTHER HAPPY ONE. He likes it without butter. THE ROLLED Pancake with the syrup... Cooling the syrup. BUGNAY SYRUP 2 cups bugnay 4 cups washed/mascuvado sugar 2 cups water Mash the bugnay, add water and strain to separate seeds. Add sugar and stir to dissolve. Bring to boil uncovered for 20 minutes while stirring occasionally.Let cool. Bugnay... TANGO in the kitchen...
