Chicken Ala King (but more like Vege basket or toast)

The flower basket is how Chicken Ala King was popularly sold and served because it is pretty and convenient. However, for me who was a teener who grew up eating Iloilo City JD Bakeshop's Chicken Ala King and now an adult missing it, I missed it served in a platter of three triangular loaf bread slices with the flavorful chicken and corn mix on top. Well, I attempted to do the triangular but also tried to do the open toast style because we were in a hurry to have lunch already. Well the ala king can be served three ways. Memorably. Choco banana marble cake

I have a small bowl of chocolate in the fridge, a left-over from the chocolate fountain we served during the last birthday of my nephew. I also have small green bananas (balangon variety) hanging in our clothesline to ripen. So, an idea sparked: make a chocolate and banana cake. Since the banana is not over ripe, i did not mash it but instead, sliced it. For this recipe, I used the the following proportion times three. I churned out three 9 x 6 pans with 1 inch thick cake I cut into squares. So for a small pan, here is the proportion.... 2 cups sifted flour 1T baking powder 2 pcs chicken eggs 1 cup milk or water 1/2 cup canola oil (or may use butter/margarine) 1/2 cup sugar (or more if desired) 1 cup sliced banana (or mashed, if desired and I used a lot of this in this recipe)  1/4 cup chocolate syrup (or melted chocolate of choice) To melt chocolate from the fridge, I boil water in a small deep pan and place a stainless bowl of top of the pan. Walnut-Raisins-Coconut Macaroons

4 cups walnut 1 cup raisins 6 cups desiccated coconut 3 cups flour 4 pcs eggs 1 cup canola oil 11/2 cup brown sugar 2 cans condensed milk Grated cheese or pinch of salt (optional) Break whole walnut into pieces and combine raisins in a bowl. Set aside. Combine desiccated coconut and flour in a deep bowl. Set aside. In another bowl, break eggs, add canola oil, beat lightly add sugar. In the coconut-flour mixture, add the egg-oil mixture alternately with milk one portion at a time and mix.  Repeat until all are mixed together.  Add the walnut and raisins, and cheese or salt if desired.  Bake at 180F for 20 minutes. This recipe made about 150 pcs but the macaroons are not uniform in sizes and a small muffin baking tin is needed to hold the batter as the paper tin cannot mold by itself and so that the outcome of the macaroons will be uniform.... Ultimate Banana-Oatmeal Muffin

By GERLIE M. UY It's so filling. I can't feel the oatmeal. These are what they say about my last banana-oatmeal muffin. I called this ultimate because I love the rise, i love the banana taste and the bready feel of flour and oatmeal. I have made banana cake and muffins  here  and  here  but this is much more memorable output as it is just perfect for me. I made a big batch as we have bunches of "balangon" (green variety) bananas... 2 cups canola oil 6 cups brown sugar  6 large eggs, beaten 10 cups flour, sifted 5 cups oatmeal quick cooking 3 T baking powder 2 cans (3 cups) evaporated milk 2 t vanilla  10 cups of mashed over ripe banana (balangon or the green variety) Pre-heat oven to 350F. Grease a medium muffin tins. In a mixing bowl, cream the first three ingredients until well-blended. Set aside. Combine the sifted flour and baking powder.  In the mixing bowl of creamed ingredients, alternately add mixed flour and milk, a little at a time. Blending...

Banana Muffins with almonds on top

By GERLIE M. UY My banana muffin sprinkled with chopped almonds...   I have already featured the Banana muffins with glazed pili nut  here  in my blog. That try did not gave me a fluffy muffin as it was loaded with banana and so I noted what I should do the next time. So, I am pretty satisfied with the turn out of my recent banana muffin. In the past I have made banana cake with peanuts too . I made changes this time for my muffin. I used canola oil instead of butter, omitted the salt and baking soda (used to avoid discoloration of the banana) and used vanilla. I made 29 medium-sized muffins all in all for this recipe. Fluffy banana muffin with chopped almonds on top. 1 cup canola oil 2 cups brown sugar (add 1/2 cup more if desired) 3 large eggs, beaten 4 cups flour, sifted 2 t baking powder 1 1/2 c evaporated milk 1/2 t vanilla  6 cups of mashed over ripe banana (balangon or the green variety) a handful of almonds Pre-heat oven to 350F. Mango-Sesame Muffin

Mango-Sesame Muffin Muffins, up close and personal mmm, yummy muffins. 3 cups all-purpose flour yummy muffins 11/2 cup sugar   1 1/2 t baking soda 1 1/2 t baking powder  3 t cinnamon powder   3/4 t iodized salt   4 eggs, lightly beaten   1 cup canola oil   1 t calamansi juice   3 cups shredded ripe mangoes   3/4 cup raisins   1/4 cup sesame seeds In a large tin or glass bowl, combine the first five ingredients. In another bowl, combine the eggs, oil and calamansi juice. Slowly add the latter to the dry ingredients (the former mixture) just until moistened. Then stir in the mango, raisins and sesame seeds.   Fill greased muffin tins with the mixture up to two-thirds full. Bake at 350 degrees F for 20 minutes or until a toothpick comes out clean. Cool before removing from muffin tins.
