My Mongo Sprouted to two inches, at last!

Constant practice makes perfect. Hunger is the mother of kitchen innovations. Try and try and eat all you tried. These are some kitchen wisdom one can wield while doing some expwriments. We sprout mongo here but it is not as long as two inches as those used by the Vietnamese in their Pho. We only have a day or two of soaked mongo and we remove the outer skin one by one. Ours is what we put in our fried lumpia. I love sprouted mongo because it has high Vitamin C content and I want to prove a point among people who bwlittle our humble bean because it causes their arthritis. Well, this protein rich bean do mot have skin anymore, so arthritis is not going to work here even after eating it for three meals. We can add this to our pansit, stirfried beef or chicken, omellette, ukoy, soup and many more. I can also eat it as is as its taste and crispness remind me of singkamas.  Well, my secret in achieving the length is in the basket I used and the allowance for the roots to go ...

Banana pancake with sugared banana and bugnay syrup

Pancake.. 2 cups mashed ripe bananas 2 cups flour 2 eggs Water Sugar Mix all ingredients. Adjust water until the mixture is runny. Fry in a non stick pan. Add a small amount of oil from time to time, of desired. Check bugnay syrup in the past posts... For banana jam, in a pan simmer mashed bananas and sugar until cooked in desired consistency. Srve hot!

HAPPY MORNING CUSTOMER.Pancake with Bugnay Syrup for breakfast!!! ANOTHER HAPPY ONE. He likes it without butter. THE ROLLED Pancake with the syrup... Cooling the syrup. BUGNAY SYRUP 2 cups bugnay 4 cups washed/mascuvado sugar 2 cups water Mash the bugnay, add water and strain to separate seeds. Add sugar and stir to dissolve. Bring to boil uncovered for 20 minutes while stirring occasionally.Let cool. Bugnay... TANGO in the kitchen... Pancake...  PANCAKE 3 cups flour 1 cup cornstarch a pinch of salt 1t turmeric powder (for color) 2 eggs 150 evaporated milk 1000 to 1250 ml water Folded Pancake, waiting for the butter. Butter Mascuvado sugar Sift flour and cornstarch and put in a deep bowl. Add salt and turmeric powder. Make a well, add eggs and milk. Vietnamese Vegetable Pancake (Banh Xeo)

By GERLIE M. UY The Banh Xeo served with the ever salivating Nouc Cham... PANCAKE: 200 g Banh Xeo 1 T turmeric powder 250 ml evaporated milk 200 ml water (Or coconut thin milk, as per package instruction) Small amount of oil FILLINGS: 1 T canola oil 1 pc. carrot, cut into strips 1/2 sayote, cut into strips 10 pcs Baguio beans, cut into slant strips 1 small head cabbage, cut into strips ground pepper SAUCE Nouc cham sauce (fish sauce and calamansi) In a deep bowl, put the Banh Xeo and cumin powder. Slowly add the milk and water until dissolved and there are no lumps. Set aside and leave oil for later. In a pan, stir-fry the vegetables, add ground pepper. Set aside. Heat a non-stick Teflon pan, put about 1/4 cup. Cover for about 30 seconds and place a small amount of oil around the edges. Place stir-fried fillings. Fold the pancake half-way to cover the fillings. Remove from pan and lay on a plate. Roll pancake before serving. Serve immediately with Fish and Calamansi sauce (Nouc Cham) ...
