Fish and Veges in Tomato-based broth

  I cooked this last time that is why I call this Mother's Day Soup in my instagram post . Actually, this was my ambitious attempt to make French's bouillabaisse, Italian's Cioppino or Mediterranean soup. Of course, if the history of bouillabaisse is to be checked, it is not that grand because they make soup out of parts of fish that is not bound to the market.  If I will name this soup, I want to call this.. Farmer and Fisherman's soup Blue Marlin, sliced to matchbox serving size Salmon, sliced to matchbox serving size   onions garlic Carrots Bellpeppers potatoes cauliflower brocolli Tomato paste Tomato sauce salt and pepper spices: turmeric powder, chili powder, cayenne, cumin, paprika dissolved in 1 C water. another cup of water, if needed.   How to: Preheat oven to 180C for 10 minutes. Beef and Mushroom Biryani Rice

250gms ground beef Greek yogurt Canola oil 2 cups rice 2 cups water Turmeric 2 packs Asian Gourmet  spice Salt Mushroom Carrots, chopped Chopped oregano Toasted cashew nuts Marinate beef in yogurt for 10 minutes Saute beef in a little oil. Set aside. In a wok, rinse rice. Add water, turmeric and prepared spice. Bring to boil covered. Add mushroom and carrots. Cook in low heat. Add hot water to adjust rice absorption to allow it to cook. Garnish with cashew nuts and chopped oregano. Serve hot. Posted via Blogaway

Squash Ukoy with Tostitos Spinach Dip

Squash, grated (Use steel cheese grater) 2 heads Onion, chopped 6 cloves garlic, chopped Toasted garlic (optional) Salt and pepper Dried Italian herbs and/or turmeric Oatmeal Flour Canola oil for frying In a deep bowl, put first six ingredients. Add oatmeal until manageable to form into patties. Just add flour a little at a time to adjust. Fry each patty and drain excess oil in a paper towel. Serve with tomato ketchup or Tostitos Spinach dip. Posted via Blogaway

6-step Whole Chili Achara

200 pcs Deseeded Whole Chilis Carrots, cut into strips 1.5 liters vinegar (coconut) 500ml pineapple juice salt and cracked peppercorns garlic, chopped onion, chopped ginger, chopped 500 gms sugar Turmeric powder (optional) *** Arrange chilis and carrots in sterilized jars. In a wok, put vinegar, pineapple juice, sugar and the spices. Bring to boil for about 15-20 minutes. Pour boiling vinegar in each jar. Seal. Refrigerate when cooled down. Serve as appetizer. (If you have no jar, put all chilis and carrots in the vinegar and cover with lid. Let cool and transfer to plastic container. Refrigerate to prolong shelf life) ***

Rainbow omellete and Java rice

Chopped garlic and onions sauteed in canola oil, add chopped carrot, baguio beans and two tablespoon of sweet corn kernels put some salt and pepper to taste, stir fry until tender and  spread three beaten chicken eggs covering the vegetable mixture .   Rainbow Omelette entices the little boy to grab a plate and eat! *** On the same pan, add a little oil. Saute garlic and onion and add left-over rice put salt and pepper and pinches of turmeric powder. Add toasted garlic, if desired. *** Some more photos... *** yummy java rice. ***

Arroz Con Caldo

UY 2 T olive oil 12 garlic cloves, chopped 1 big onion, chopped 1 thumb (or more) ginger, chopped 1/2 kilo chicken, cubed 1/2 kilo malagkit rice water 2 chicken cube soy sauce turmeric powder (kalawag) salt and pepper Toasted garlic for garnish. In a skillet, saute onion and garlic in oil. Add ginger. Add chicken cube and stir fry for a while and add the washed malagkit rice. Stir again for about 3 minutes. Add water. Let boil until rice pops open. Add chicken cubes, soy sauce, turmeric powder, salt and pepper. Let the flavor sink in and the soup is ready to be served hot. Garnish with toasted garlic.

More of the okra tempura... young okra sliced in half!!! 2 cups flour with turmeric powder and ground pepper my fave duo... beaten eggs  the batter the batter with the bread crumbs the batter and the okra... not-so-deep fry... my idea of deep-fry up close and personal with the batter mixture About 20 pieces young okra, sliced in to vertically into two 2 cups flour 1 T turmeric powder A dash of ground pepper A dash of fine iodized salt 1 cup bread crumbs 2 eggs, beaten 1/2 to 1 cup water 1 cup canola oil Sweet Chili ketchup, Plain ketchup or homemade thousand islands dressing In a bowl, add flour, turmeric powder, pepper and salt.  Add bread crumbs and eggs. Add water and mix thoroughly.  Add okra slices. In a small sauce pot, add the oil. Vietnamese Vegetable Pancake (Banh Xeo)

By GERLIE M. UY The Banh Xeo served with the ever salivating Nouc Cham... PANCAKE: 200 g Banh Xeo 1 T turmeric powder 250 ml evaporated milk 200 ml water (Or coconut thin milk, as per package instruction) Small amount of oil FILLINGS: 1 T canola oil 1 pc. carrot, cut into strips 1/2 sayote, cut into strips 10 pcs Baguio beans, cut into slant strips 1 small head cabbage, cut into strips ground pepper SAUCE Nouc cham sauce (fish sauce and calamansi) In a deep bowl, put the Banh Xeo and cumin powder. Slowly add the milk and water until dissolved and there are no lumps. Set aside and leave oil for later. In a pan, stir-fry the vegetables, add ground pepper. Set aside. Heat a non-stick Teflon pan, put about 1/4 cup. Cover for about 30 seconds and place a small amount of oil around the edges. Place stir-fried fillings. Fold the pancake half-way to cover the fillings. Remove from pan and lay on a plate. Roll pancake before serving. Serve immediately with Fish and Calamansi sauce (Nouc Cham) ...
