What's eating me in the Big Apple?

Hahaha! The title is a scam just for fun. I am writing about what I was eating during my month-long vacation in the Big Apple. Well, I can say that I liked what I ate all throughout.  I disliked what I had only on three occasions: I don't like the bread used in the sandwich of Nathan's Cart as well as in The Met cafe. While both are in New York City, the only proper eatery I disliked was in DC where I had Chinese noodles and dumplings in the only-open restaurant at 10 am and the best according to the bills posted on its door. I started this blog with what I didn't like so you won't think that I am no picky eater, and that I have no discriminating palate given that I liked almost everything even the neighborhood Colombian food. Let me group the food I had and let me walk you through the memory lane of my gustatory delight sans the elaborated plating and expensive ambiance.   1. Cassava Cake Pudding with sweet corn and olive oil

*** 2kg Cassava 4 tablespoon Olive Oil or butter 3 Eggs 1-2 cans condensed milk 1 can sweet corn (Canned Cream Corn or boiled then grated) sugar (add, if desired) Peel the cassava, remove the hard root and ground in a blender/grinding machine for a pudding finish.  If grated, the consistency is different as it will appear like a fudge finish. In a deep bowl, put the ground cassava and the ground sweet corn. Make a well, place the lightly beaten eggs, milk, and additional sugar.  Mix well together until smooth. In a pan, put the mixture and bake for 40 to 45 minutes at about 200F. Make 3 1-inch 9X12 pan of Cassava Cake Pudding. Serve hot or chilled.

1 1/2 kilo cassava, ground or grated 2 cans condensed milk 2 eggs, beaten 1 cup butter 2 cups sugar Pre heat oven at 350F. Soften butter. Add a cup of sugar, mix well and set aside. In a big bowl, placethe ground cassava, add the milk and eggs and mix well. Portion by portion, add the butter and sugar mixture to the cassava mixture and mix well. Grease and pour the mixture in a tin pan, ideally 9x6x2 pan. Bake for 30 minutes. If desired, glaze the pudding with butter and sugar. Let cool a bit and slice and serve!

Shredded Cassava Cake

UY 8 cups shredded cassava (some like it grated) 6 eggs, lightly beaten 2 cans condensed milk (about 300ml each) 1 small evaporated milk (1 cup or 250ml) 4 cups brown sugar 1/4 cup butter cheese for toppings (optional) Lightly wash shredded cassava with two cups warm water and drain liquid. Do not press. Pre-heat oven for 300F. In a deep bowl, mix all ingredients together except cheese. Reserve a portion of butter for greasing of pan. Strain and reserve a cup of liquid from the mixture. Grease two one-inch 7 X 11 pans. Pour half of the mixture in each pan. Bake for 30 minutes. Meanwhile, cook in medium heat the reserved cup of mixture and put the cheese. Set aside.
