My two favorite fried vegetable... Dip the Okra tempura and Camote fries in a plain tomato ketchup or mix ketchup with mayonnaise... Wonderful take on a Japanese cooking!

Shortcut Okra Tempura

More of the okra tempura... young okra sliced in half!!! 2 cups flour with turmeric powder and ground pepper my fave duo... beaten eggs  the batter the batter with the bread crumbs the batter and the okra... not-so-deep fry... my idea of deep-fry up close and personal with the batter mixture About 20 pieces young okra, sliced in to vertically into two 2 cups flour 1 T turmeric powder A dash of ground pepper A dash of fine iodized salt 1 cup bread crumbs 2 eggs, beaten 1/2 to 1 cup water 1 cup canola oil Sweet Chili ketchup, Plain ketchup or homemade thousand islands dressing In a bowl, add flour, turmeric powder, pepper and salt.  Add bread crumbs and eggs. Add water and mix thoroughly.  Add okra slices. In a small sauce pot, add the oil. White Onion Rings

By GERLIE M. UY 1 large white Onion 1 egg, beaten 1 t of cold water pinch of salt and black pepper flour oil for frying Slice white onion horizontally and separate them into rings. In a bowl, place the beaten egg. In a plate, spread flour. Dip each onion ring in the beaten egg, roll in the plate of flour and deep-fry. Repeat procedure for each ring until done. Serve immediately with ketchup on the side.

Squash Ukoy / Squash Tempura Cake

1 small squash (about 500grams), sliced thinly into strips or french fries-sized Batter: 2 cup flour 1 cup cornstarch 2 t salt 2 eggs oil for frying  (half sesame oil and half canola oil) Mix all ingredients. Make sure the mixture is not too dry and not too watery; just enough to form a spoonful into a patty when placed in the pan for frying. Heat oil and drop a spoonful of mixture, press to for into patty. Let fry for 2 minutes on each side or until light brown. Drain oil and serve hot with ketchup or cane vinegar.
