Foamy Pineapple-Lettuce Coolers

Do you like it? He did not answer but extended his tongue inside the glass to reach the foamy residue of our pineapple cooler which has a new pair, lettuce from our garden.  I already made pineapple and some mint from our garden and that is the staple in our table, but yesterday, we had an extra special juice. The second batch I made for the day was still a hit, and I asked the boy if he liked it. He said, medyo (a bit).  I instructed him to harvest a tray of lettuce today and I want to hear a 5-star rating from him next time we make the cooler. Let's see if he can give it five stars if he harvested the lettuce himself.  Fresh Pineapple chunks Pineapple Juice in can or water Bunch of Lettuce Mint Honey Ice cubes In a blender, blend first the pineapple slices and add the juice. Add the lettuce and mint, and blend again. Add honey and ice cubes then blend for the last time. Serve cold and foamy. 

Lettuce Wraps with Peanut Sauce

Last Thursday, I went to the wet market and found a big ball of iceberg lettuce that is fresh and crispy. I did not think twice and bought the prettiest of them all right away. The key to a good cooking and to eating well is to eat the vegetables while it is still in the fresh stage.  My imagination sent me to a Lettuce Wrap for breakfast.   A head of Iceberg Lettuce Cubed cucumbers, tomatoes, and white onions Shredded roasted chicken Extra ground peanuts How to make the Peanut Sauce 2 T Hoisin Sace 1 C water 1 T cornstarch dissolved in water 2 T ground peanuts  In a sauce pan combine hoisin and water. Bring to boil. Add cornstarch to adjust consistency and peanuts.  To serve, in a lettuce leaf, add all ingredients in gusto and then devour. Happy eating!!!!

Summer Roll in Hoisin-Cashew Nuts Sauce

Summer Roll is a favorite! The rice paper is found in the International section of any supermarket. Here is how to prepare your own: Sauce: Combine Hoisin sauce, chopped cashew nuts and a little soy sauce and water.  Bring to boil until desire consistency. Rolls: In a chopping board, lay a piece of rice paper, moisten with water. Place desired vegetables and cooked fish, meats or prawns. Fold and roll as you would a regular spring roll!  Option: You may serve with dip or include in the roll, the sauce. *** *** Lettuce *** Carrots and cucumber ***

Shabu shabu and yakiniku

Shabu shabu is the hotpot where everything can be placed inside a boiling pot and then eaten as soup. Yakiniku is the grilling of dofferent meats and seafoods. I love wrapping the grilled meat with lettuce.. It was a happy lunch despite sans the rice... Lol Yakiniku Nice rich soup... Love the fact that they used squash and gabi to give some flavor and texture boost to the soup. Boiling soup.. Of course, kimchi is my favorite... The preparation..

Crispy Red Radish and Cucumber in Yakult dressing

UY Cucumber and Red Radish Crisps! 6 red radishes, sliced thinly 1 medium cucumber, sliced thinly 1 small white onion, sliced thinly 1 small head of lettuce Dressings 3/4 to 1 Yakult (60 to 80ml) 3 Calamansi, juiced 1 T olive oil salt and ground pepper In a non-metal bowl, mix all first three ingredients. Chill. For the dressing: in a glass with lid cover, put all last four ingredients and cover. Shake. Drizzle dressing in the first bowl of vegetable. In a serving platter, lay the lettuce bed. Just before serving, add all of the vegetables. Serve lightly chilled and serve immediately. Another look at the salad... cucumber... yakult quick photo of the salad... the salad on the side!!!

Tuna and Corn in Summer Rolls

Tuna and Corn Summer Rolls    I already prepared and posted summer rolls in this blog. For this recent one, I used canned tuna and sweet corn. See more of Summer Roll here and here for the Vietnamese dipping sauce: Peanut-based and the Fish-Sauce-based ones. Since the ingredients as well as the recipe are in the links above, please go over the same after looking at these photo instructions on how to make your own Summer Roll. In a tablespoon of canola oil, saute minced garlic, add canned tuna in oil or in brine (If using in oil, use the oil of the canned tuna) and simmer for a minute and then add the canned sweet corn, water drained. Simmer for two minutes and add the sliced white onions. Let stand until the mixture is dry.   Prepare the cucumber by slicing it julienne fro about 2 inches and tear or slice the lettuce in strips. Also choose the greenest lettuce available in your local market and tear the leaves into two big pieces.  Inside the curved, pan-heated Corn Tortilla, put some leaves of lettuce.  Add a spoonful of tomatoes and white onions and another spoonful of beef. Quick Beef and Salad in Pita Bread Wrap

Com  Saute 250g of ground beef in 2 tablespoons olive oil For the salad, chop white onions and tomatoes. I must add chopped cucumber too  but I was not able to include the same in my first try. Also choose the greenest lettuce available in your local market and tear the leaves into two big pieces.  I bought a frozen Pita Bread (Philippine Made) from the grocery.  Heat the pan. Add the pita bread and heat each side from 2-3 minutes.  This one did not rise but the original pita rises and creates a pocket in between.  At any rate, this is no problem as we will be making a wrap.  On top of the pan-heated pita bread, put some leaves of lettuce....
